This Low- Carb Creole Jambayala recipe is a one-pot classic New Orlean’s style meal. It is pure comfort food without the guilt.
This is a low carb dish full of satisfying proteins. It has a wonderful variety of vegetables including the “trinity”. The trinity is a combination of bell pepper, onions, and garlic and is the base for many Creole dishes.
Small swaps yield huge rewards. Simply by using cauliflower rice instead of white rice we drastically cut the calories and the carbs. Cauliflower has 25 calories and 5 grams of carbohydrates per cup vs 205 calories and 45 grams of carbohydrates in a cup of white rice.

Creole Jambalaya
1 pound of andouille sausage, thinly sliced
3 boneless, skinless chicken breasts, diced
1 tablespoon butter
1 cup chopped onion
½ cup green bell pepper, seeded and chopped
½ cup chopped celery
5 cloves of garlic, minced
1 (28 ounces) can diced tomatoes
1 cup chicken broth
12 ounces riced cauliflower
2 teaspoons sea salt
1 tablespoon onion powder
½ teaspoon black pepper
½ teaspoon cayenne pepper
½ teaspoon white pepper
- 1 pound large peeled shrimp (OPTIONAL)
½ fresh squeezed lemon
¼ cup fresh parsley for garnish

To make the ‘creole trinity’, heat a large pot over medium-high heat and add butter. Add onions and saute for about a minute. Next, add green peppers and celery, cook for an additional 3 minutes. Add garlic to the pot, and cook for 30 seconds more.
2. Add sliced sausage to the veggies and cook for about 2 minutes until the onions are translucent.
3. Add the broth, chicken and cauliflower rice, mix together and cover. Cook for about 5 minutes.
4. Add tomatoes and spices. Stir to incorporate.
5. Cover and let cook for another 15 minutes or until cauliflower is tender and meats are cooked through.
6. Add shrimp and mix well, shrimp will cook quickly.
**use 1/4 teaspoon of cayenne, black and white pepper for less heat.
Add additional cayenne pepper and tabasco for more heat. ENJOY!

**Add tabasco for an extra spicy kick.
