This low carb, dairy-free, paleo-friendly and keto-friendly Creamy taco soup is hearty and delicious. It’s packed with a rainbow of veggies, phytonutrients, vitamins and protein and healthy fats. It’s like enjoying the tacos without the carbs and guilt!
It’s low maintenance. You can make it on the stovetop or a crockpot. The flavor is delicious, complex and has just the right amount of heat. This meal is well-balanced with filling proteins, nutritious veggies, and healthy fats.

What you’ll need:
- Grass-fed ground beef
- Avocado oil
- Yellow onion
- Red, yellow, and orange bell peppers
- Fresh jalapeno
- Garlic (fresh or minced)
- Chili powder
- Cumin
- Paprika
- Sea salt
- Black pepper
- Red pepper flakes
- Onion powder
- Oregano
- Canned, diced fire-roasted tomatoes
- Bone broth or low-sodium chicken broth
- Coconut cream
I love using coconut cream in recipes because it gives you that indulgence of cream without having to use dairy or adding a lot of saturated fat to the recipe. You can find coconut cream at most grocery stores in the canned fruit and vegetable aisles. Keep in mind, coconut cream is different than coconut milk, so don’t grab the wrong thing by mistake!
RECIPE NOTES:
- Ground beef: I recommend 90/10 grass-fed ground beef. You can also sub with lean ground turkey or chicken.
- Onion: can sub with onion flakes or onion powder.
- Garlic: can sub with garlic powder.
- Bell peppers: add lots of flavor to the soup but are optional.
- Jalapenos: use 1 small can diced green chilis. This will keep it from being too spicy.
- Fire-roasted tomatoes: can sub with Rotel tomatoes.
- Coconut cream: Coconut cream will make the soup nice and creamy and keep the soup dairy-free. You can sub this with dairy as well- cream cheese or heavy cream.
- Spices and Seasoning: Chili powder, cumin, paprika, oregano, salt, and pepper – these spices add that classic taco flavor. You can sub using taco seasoning to save time. Also, if you have trouble finding the “smoked paprika” just use paprika.
- Kidney Beans: Can sub for any beans you prefer, eliminate beans to make Paleo-friendly.
- Beef Bone Broth: You can also sub with water or chicken broth if desired.
- Don’t like spicy? eliminate the jalapeno and red pepper flakes if less heat is preferred.
- Paleo-friendly: omit the beans and any dairy topping options

Creamy Taco Soup

Ingredients
1.5 pounds grass-fed ground beef
2 tbsp avocado oil, divided
1 large yellow onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange pepper, diced
1 jalapeno, diced
8 cloves minced garlic
2 tbsp chili powder
2 tbsp cumin
3 tsp smoked paprika
2 tsp sea salt
1/2 tsp black pepper
1 tsp red pepper flakes
1 tsp onion powder
1 tsp oregano
28 ounces fire-roasted canned, diced tomatoes
16 ounces bone broth or low-sodium chicken broth
1 cup coconut cream
Directions
- Stove Top
- Add one tablespoon of the oil to a large stock pot and heat over medium high heat. Brown the grass-fed ground beef. Drain the beef through a colander and set aside.
- In a large sauté pan over medium heat with 1 tablespoon of avocado oil, add onions, garlic, bell peppers, jalapenos, and a sprinkle of sea- salt. Sauté until soft and tender for about 5-7 minutes.
- Add browned ground beef, all seasonings and spices, tomatoes, broth, coconut cream and stir until well combined.
- Bring the soup to a low boil and reduce the heat to a simmer. Let it simmer for about 20-25 minutes. Taste for additional salt and pepper and, add any or all of the toppings listed below.
- Crockpot
- Add one tablespoon of the oil to a large stock pot and heat over medium high heat. Brown the grass-fed ground beef. Drain the beef through a colander and to the crock-pot.
- In a large sauté pan over medium heat with 1 tablespoon of avocado oil, add onions, garlic, bell peppers, jalapenos, and a sprinkle of sea- salt. Sauté until soft and tender for about 5-7 minutes and add to the crock-pot.
- Add the remaining ingredients: all seasonings and spices, tomatoes, broth, coconut cream and stir until well combined.
- Cover and cook on low for about 8 hours. Taste for additional salt and pepper and, add any or all of the toppings listed.
