Beefy Burrito Bowl
These beefy burrito bowls are delicious. They make a quick, healthy meal that’s a crowd-pleaser for both kids and adults.
Using cauliflower rice instead of regular rice eliminates carbohydrates and helps to stabilize blood sugar which is always a thumbs up.
The lean ground beef, grass-fed is best, and black beans are high in protein. The beans are also a great source of fiber, along with vitamin A, calcium, iron, and manganese.
As an option, use romaine lettuce leaves to make a wrap. You can also switch up the toppings to suit personal likes and let each person individualize their bowl.

- 12 oz cauliflower rice (steamed) (0r 2 cups of grated steamed cauliflower)
- 1/4 cup fresh cilantro, chopped ((can use flat-leaf parsley))
- 1 1/2 lb. lean ground beef
- 2 tbsp chili powder
- 2 tsp ground cumin
- 1 1/4 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1 tsp sea salt
- 1/2 tsp cayenne pepper (optional)
- 1 15.5 oz can black beans, drained and rinsed
- 3 cups baby arugula
- 1 16 oz container refrigerated salsa
- 1 tbsp Greek yogurt topping (optional)

Cook cauliflower-rice according to package directions; stir in cilantro and set aside.

Brown ground beef in a large nonstick skillet over
medium-high heat; drain and stir in seasonings.

Heat beans in a small saucepan.

Divide cauliflower rice evenly among 4 serving bowls.

Top with ground beef, beans, arugula, salsa and Greek yogurt.
