Fresh zucchini and yellow squash delightfully squeal summertime is here. What better way to enjoy them than on a pizza!!! Yes, a pizza- a healthy pizza. I served this as an appetizer at a party and it was hit. It could easily be an entree as well.
I made a trip to my local farmer’s market this past weekend. I had fresh squash, zucchini, onions, basil, tomatoes, and even mozzarella cheese. I was excited to find a cauliflower crust at my local Whole Foods- and it is good! I have made my own cauliflower crust many times, and love it. This store-bought crust is a yummy easy button- I LOVE a healthy easy button =)
Okay, zucchini and squash are pretty mild in flavor, but we will kick it up a notch with some red pepper flakes.
The cheese is delicate and creamy and the
walnuts give a surprising crunch.
My hubby is not a fan of tomatoes, so I made one pizza with tomatoes and one without. If there is a veggie you don’t like, just omit it.
This pizza is refreshing and absolutely delicious.

Summer Pizza with Goat Cheese and Walnuts with Cauliflower Crust
- 1 9" cauliflower pizza crust-homemade or store-bought
- 1 tbsp extra-virgin olive oil
- 1 clove garlic, minced
- Pinch crushed red pepper flakes
- Sea salt
- Black pepper-freshly ground
- 1/4-1/2 cup shredded mozzarella
- 1/2 onion, thinly sliced
- 1/2 squash, thinly sliced
- 1/2 zucchini, thinly sliced
- 1/4 cup cherry tomatoes, sliced
- 1/4 cup basil, chopped
- 2 oz goat cheese
- 2 tbsp toasted walnuts, chopped

Preheat oven to 450 degrees

In a small bowl, combine the olive oil and the minced garlic and let stand to make a garlic olive oil. Brush it on the pizza crust. Sprinkle the red pepper flakes, then the salt and black pepper.

Add the onion slices, some mozzarella cheese on top. Arrange the squash and zucchini slices in a single layer, overlapping slightly if necessary. Top with the basil, goat cheese and any remaining mozzarella.

Bake pizza for 5-10 minutes- until the top slightly brown and the crust is crispy. Cooking time will vary. Once removed from oven, sprinkle with walnuts and drizzle with olive oil,
Cut into wedges and serve warm.
