Ground Turkey with Spinach, Spaghetti Squash and Marinara Sauce
The entree dish is gluten free, grain free, dairy free, and delicious! The meal is family friendly and clean eating at it’s QUICKEST! Can I get an amen? Super easy dish to make. Two time saving tips 1. purchasing “zoodles”, zucchini noodles (or any vegetable noodle) at the grocery store prepped, if not, make your own! 2. Buy an organic spaghetti sauce ***sugar free!
This dish is a great for batch cooking or food prepping. You can make the seasoned ground turkey ahead of time, and use the store bought vegetable noodles and spaghetti sauce to make it simple and quickly.
Ground Turkey and Spinach
- 1 tbsp coconut oil
- 1 pound ground turkey
- 1 tbsp Italian seasoning
- sea salt and pepper to taste
- 2 cups fresh spinach
Roasted Spaghetti Squash
- 1 spaghetti squash (about 3 pounds)
- 2 tbsp coconut oil, melted
- sea salt and pepper to taste
Quick Marinara Sauce
- 2 tbsp coconut oil
- 3 cloves garlic, chopped
- 1 28 oz. can crushed tomatoes
- sea salt and black pepper to taste

Ground Turkey and Spinach
Add the coconut oil to a hot pan. Once the oil is melted, add the turkey, Italian seasoning, sea salt, and black pepper. Use a fork to chop up the meat until it is browned and fully cooked. Mix in the fresh spinach and sauté until the spinach is wilted. Serve with spaghetti squash and marinara sauce (below).

Roasted Spaghetti Squash
Preheat oven to 400 degrees F.
Cut the squash in half lengthwise. Remove the seeds. Rub melted coconut oil on the fleshy side of the squash. Season with sea salt and black pepper. Place flesh side down on a baking sheet and bake for about 30 to 40 minutes, depending upon the size of the squash.
Once the squash is tender, remove from the oven and let it cool off for about 15 to 30 minutes. Use a fork to scrape the flesh. The flesh should become thin, long spaghetti strands.

Quick Marinara Sauce
Add coconut oil and garlic to a hot pan. Saute until garlic is brown, about 3 minutes. Add tomatoes, salt and pepper. Simmer until hot.
